Saleng makes a living by recooking and selling ‟pag-pag,‟ a dish made from meat salvaged from leftover food collected by scavengers from restaurant dumpsters and garbage cans around the city. Pag-pag is popular with the poverty-stricken locals in the slums where Saleng lives.
